
I have totally fallen in love with this shakshuka. It makes the easiest and fanciest brunch and comes together in about than 30 minutes. Plus it has runny eggs which makes any brunch/meal 10x better in my book. This is my super basic recipe, but I hope you enjoy it!!

shakshuka (df + gf)
ingredients
2 red bell peppers, diced into 1 inch pieces
2 fresh tomatoes, diced
1 can of diced tomatoes (blended using nutribullet)
4 eggs
2-3 tbsp tomato paste
1-2 tbsp coconut aminos
spices (salt, pepper, cumin, coriander)
olive oil
instructions
1. Sauté bell peppers in olive oil, salt and pepper until soft.
2. Then add in diced tomatoes, blended tomatoes, tomato paste, coconut aminos, coriander, and cumin. Continue to simmer until it thickens.
3. Meanwhile preheat your oven to 350 F.
4. Once the sauce has thickened, add each of the eggs to the tomatoes, then pop in the oven for 7-9 minutes!
5. After top with cilantro, black sesame seeds and a slice of sourdough bread toasted in turmeric ghee.
