to be honest i was never a true fan of pumpkin growing up. whenever it came to choosing between pumpkin and apple, i always went with apple. i'm finally catching up on my lack of pumpkin eating.

these muffins are perfect for the upcoming halloween season, and better yet they have chocolate because no dessert is complete without chocolate. and i mean look at the fluff on that muffin...
hope everyone enjoys them!

pumpkin chocolate chip muffins (df + gf)
makes 12
1 1/2 cup oat flour
2 tsp baking powder
1/2 tsp salt
1/3 cup + 1 tbsp coconut sugar
1 1/2 tsp cinnamon
1 cup pumpkin
1 tsp vanilla
1 egg
1/3 cup df butter or coconut oil
3/4 cup chocolate chips
1. Preheat the oven to 375°F. Prepare muffin tins using using muffin liners.
2. Combine flour, baking powder, salt, coconut sugar, and cinnamon.
3. Mix pumpkin, vanilla, egg, and df butter/coconut oil.
4. Add dry ingredients into the wet. Then fold in chocolate chips.
5. Spoon batter into the muffin tins, filling about 2/3 full.
6. Bake for 16 to 18 minutes. Let cool and enjoy!
